The Prairie Hill Cafe serves lunch and dinner and has an accompanying coffee bar in the lobby. Locally sourced seasonal food with options that range from healthy to indulgent, there is something for everyone. For more casual dining join us in Byron T’s saloon just off the hotel lobby and overlooking Plaza Park, featuring great cocktails and lots of New Mexico brews. And don’t forget the coffee & pastry bar, cleverly placed in the Hotel lobby so you have to walk past the fresh-baked desserts.

Prairie Hill Cafe
Restaurant owners Sara Jo Mathews and Ryan Snyder are the ones responsible for this burst of culinary activity on the historic hotel’s first floor. They both come from families with long histories in the area. “Local tastes better. It’s not just an advertising pitch, we live it,” she said. “We buy as much local produce as we can–every opportunity we have to buy local, we do. Byron T’s Saloon
Over at Byron T’s Saloon visitors can unwind at the full service bar with patio seating. The saloon features a 25 foot long walnut and granite bar and has elevated views of Plaza Park through our tall Victorian windows. There is a wall of early Plaza Hotel photos – including one of Byron T Mills, early owner of the Plaza Hotel and now our resident ghost! Watch your favorite event on one of our large screen televisions. Sip on a glass of sangria garnished with fresh fruit, or try a New Mexico crafted beer. Compliment a rib-eye steak dinner with a glass of Ruidoso Red and enjoy a fine selection of top shelf beverages.
